大理市售豆芽中尿素和亚硝酸盐含量检测与分析

Detection and Analysis of the Urea and Nitrite Concentration in Bean Sprout from Dali Market

摘要:

目的:了解大理市市售豆芽中尿素和亚硝酸盐的含量。方法:随机抽取当地菜市场及超市所售的绿豆芽和黄豆芽,采
用国家标准方法测定其尿素和亚硝酸盐含量。结果:检测的44个样品中,检出的尿素浓度为(2.51±0.56)mg/kg,亚硝酸盐的含
量为(1.94±0.96)mg/kg;地方菜市场与超市销售的豆芽中尿素和亚硝酸盐浓度比较,差异均有统计学意义(t =29.5,P <0.01和
t =10.13,P <0.01),且黄豆芽中尿素和亚硝酸盐含量均高于绿豆芽。结论:大理市售豆芽亚硝酸盐含量符合国家标准,但是尿
素含量超标。市售黄豆芽中的尿素和亚硝酸盐含量较绿豆芽高。

Abstract:

Objective: To find out the content of urea and nitrite from bean sprouts in Dali market. Methods: Green bean sprout and
yellow bean sprout from the local farmer's markets and supermarkets were randomly selected to conduct the national standard
measurement for the concentration of urea and nitrite. Results: Forty-four samples were detected. The concentration of urea was
(2.51± 0.56)mg/kg, and that of nitrite was(1.94 ± 0.96)mg/kg, respectively; the content difference of urea and nitrite in the bean
sprouts sold in the farmer's markets and supermarkets were statistically significant(t =29.5, P <0.01 and t =10.13, P <0.01). The
content of urea and nitrite in yellow bean sprouts were higher than those of the green bean sprouts. Conclusion: The content of nitrite
in bean sprouts in Dali markets meets the national standards of China, however, the concentration of urea is above the standards. And
content of both nitrite and urea in the yellow bean sprout are higher than those of the green bean sprout.
