大理学院下关校区附近餐馆冰箱冰柜卫生状况调查

目的:通过检测冰箱和冰柜内的大肠菌群,了解冰箱(柜)的卫生状况,预防食源性疾病的发生。方法:采用大肠菌群快速检验纸片法检测冰箱(柜)内的大肠菌群。结果:共检测冰箱7台,冰柜9台,大肠菌群阳性率为81.25%;生熟不分所占的比例为12.5%,杂物所占的比例为43.75%,污染物所占的比例为50%,异味所占的比例为12.5%;冰箱与冰柜大肠菌群阳性率之间比较差异无统计学意义;冷藏室与冷冻室大肠菌群阳性率之间比较差异无统计学意义。结论:冰箱冰柜的大肠菌群阳性率高,一般卫生状况较差。

Survey on Hygienic Situation of Refrigerator(Freezer)in Restaurants near Xiaguan Campus of Dali University

Objective: To learn about hygienic situation of refrigerator (freezer)so as to prevent food-borne infection disease.Methods: Rapid coliform test paper method was adopted to detect the coliform group in refrigerator and freezer. Results: Among the total detection of 7 refrigerators and 9 freezers, coliform group positive rates were 81.25%. The proportion of the raw and cooked without distinction was 12.5%, debris 43.75%, pollutants 50%, smell 12.5%. The comparison between the refrigerator and freezer coliform bacteria positive had no significant difference (P>0.05). Conclusion: The fridge and freezer are high in coliform group positive rate, poor in hygienic situation.
