Detection and Analysis of the Urea and Nitrite Concentration in Bean Sprout from Dali Market

Abstract:

Objective: To find out the content of urea and nitrite from bean sprouts in Dali market. Methods: Green bean sprout and
yellow bean sprout from the local farmer's markets and supermarkets were randomly selected to conduct the national standard
measurement for the concentration of urea and nitrite. Results: Forty-four samples were detected. The concentration of urea was
(2.51± 0.56)mg/kg, and that of nitrite was(1.94 ± 0.96)mg/kg, respectively; the content difference of urea and nitrite in the bean
sprouts sold in the farmer's markets and supermarkets were statistically significant(t =29.5, P <0.01 and t =10.13, P <0.01). The
content of urea and nitrite in yellow bean sprouts were higher than those of the green bean sprouts. Conclusion: The content of nitrite
in bean sprouts in Dali markets meets the national standards of China, however, the concentration of urea is above the standards. And
content of both nitrite and urea in the yellow bean sprout are higher than those of the green bean sprout.
