Abstract:

Objective: To evaluate the food safety in the market crucian and shrimp through making an analysis of the content of
heavy metals （Cu, Zn, Pd and Cd）in the crucian and shrimp from the market of Dali. Methods: The samples were pretreated with nitric acid and perchloric acid, and then the heavy metals in the crucian and shrimp were determined by flame atomic absorption spectrophotometry. Results: The content of Cu, Pd and Cd was lower; the content of Zn was higher. According to "NY5073-2006 toxic and harmful substances limits of no social effects of pollution food and marine products" and "GB13106-91 tolerance limit of Zn in food", the content of the four metals in the muscle of crucian and shrimp did not exceed the limits. The content of Pd in the head of shrimp was over the limits 2-3 times. Conclusion: The content of Pd in the head of shrimp exceeded the limit. The head of shrimp for food may be potentially unsafe. It should be noted by consumers.
